This evening I went to the daily challenges and accepted four of them. I started working on two of them:
- collect 10 iron ore
- dig 5 clay
I was able to mine 4 iron ore, but the challenge did not progress. I also dug 2 clay, and that one didn’t progress either.
This was before this evening’s hotfix 5, btw.
I exited the game and applied the EA hotfix 5, and then found another iron ore node, but still the challenge did not progress.
If this helps, I did select a bounty earlier this evening (before the hotfix 5) and completed it successfully.
No screenshots to share. Just picture my challenges list with 0/10 iron ore and 0/5 clay. 
The other daily challenges were 1) bass fishing, but I haven’t found any bass nodes yet, and a kill Niths quest for a zone I haven’t discovered yet so I can’t tell if they’re bugged as well, unfortunately.
