I haven’t had this much fun with a videogame in years. I could tell you all about the many things which are enjoyable, but you probably already know these so I will stick purely with the flaws:
Upgrading armour pieces requires far to many items while weapons need barely anything.
Durability feels like an afterthought, repairing costs barely anything while always being accessible. Cursed items with halved durability are straight up free.
The wait for town upgrades is unnecessary, same with bounties being limited by time. Both of these features make the game feel more like a crappy mobile game and not the amazing action roleplaying game it is destined to be.
The way that healing works could additionally need a bit of work. Pretty much being able to bring as much food into areas and boss fights as you please kind of ruins the challenge. Healing being linked to consumables also adds to the punishment of struggling with harder content, as needing to go farming for new healing supplies just after warming up to a baddie’s moveset just sucks.
A larger selection of craftable weapons would be great. I played my first character as a dexterity/faith build, and ended up being starved for choices, it took really long until I was able to gear up from tier one to tier two and even longer for reaching tier three. It was weird seeing a greathammer be the first weapon to fall into my hands when reaching the third tier, I did not pick dexterity because I wanted to use huge weapons.
The inability to rank up unique weaponry to higher tiers makes most of them go to waste, so more options for customizing gear would be great.
