The rewards change every time you logout/login to realm.
You can complete all bounties/challenges.
Then go to the guy and log out and log in untill you see rewards you want.
This seems not intended I guess, since I can stack up on embers this way really easy.

I noticed this too, saw a really good wand for my main so I switched over to it, completed the challenge and the reward had changed. Quite unfortunate. Hope it gets fixed soon.
Also it would be nice to have a timer on the challenge page. No idea when daily or weekly rest is.
Its 5:00 AM my time on CET / GMT+1 that the dailies reset.
And the weekly seems based on when the realm was created.
Yes I stayed up very late playing the game this weekend
