The only advantage of more armor is to increase your poise, which does help when using shield builds. You can tank most attacks while dealing damage and recover depending on your enchantments. But other than that this advice is pretty good.

This is true and I was going to mention it in the video but didn’t want to make it longer than about 5 mins.

Do keep in mind that if poise is the objective, shields give you immense amounts of poise: Heavy: 30 - Medium: 20 and Light: 10.

Maximum poise is 50 and most armor sets can give you 15+ poise.
